Pineapple-Pomelo-Lettuce Salad for Lunch

I had no high hopes with the salad I set out to prepare for today’s lunch. Mainly because I read somewhere that there are certain types of vinegars that just don’t mix well with the olive oil used in preparing a vinaigrette. I only had white vinegar in the kitchen, which made it seem unlikely for me to make my vinaigrette taste good enough. But I didn’t relish the idea of throwing away the remaining iceberg lettuce that’s been sitting in the refrigerator for two to three days so I decided to make the salad with whatever ingredients I have.

Surprisingly, the salad just sort of came together so well that I couldn’t believe I actually made it. Paired with ice Jasmine green tea, my salad lunch meal was refreshingly light, cool, and delicious. Perfect for a hot summer day.



(For the vinaigrette)

  • 3 tbsp olive oil
  • 2 tbsp white vinegar
  • 3/4 tbsp sesame oil (something I added on a whim)
  • 1 tbsp dark honey
  • a pinch or two of salt
  • a pinch of ground pepper

(For the main ingredients)

  • 3 small to medium sized heads of iceberg lettuce
  • 1 ripe tomato (with seeds removed)
  • 1/2 medium sized ripe, juicy, and sweet pomelo (picked from the pomelo tree in our front yard)
  • 3/4 cup of canned pineapple chunks (without the juice)

(For the ice Jasmine tea)

  • about 500ml of ice water
  • Twinings Jasmine Green Tea (left to sit for 5 minutes in the ice water)
  • (optional) dark honey or brown sugar
